About Me
I’m a New Zealander living in Amsterdam who absolutely loves food but grew up with myriad tummy problems. They’ve all been put down to the ol’ IBS and anyone who’s been given this diagnosis will understand it’s more than a little frustrating. While I’ve been told there’s nothing that will help and I’ll ‘grow out of it’, I’m sure that making some dietary changes will improve a crappy situation.
This is where Cooking with Nothing comes in. I’ve tried countless elimination diets (see vegetarian, FODMAP-, lactose- and gluten-free recipes) to try and figure out the cause of my suffering, so am used to substituting ingredients and working within boundaries. I do, however, have a boyfriend who loves to eat my food so I try to make ‘diet’ food not feel so diety…
The erratic-ness of the site corresponds to my food history. One day I’m eating something, the next day not (ask my friends who have to get an updated list if they ever want to cook for me). It’s just a simple blog to follow my progress, share some recipes and hopefully help others with the same issues.
